  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the onion and garlic and cook for 2-3 minutes until softened.
  3. Add the carrots and celery and cook for another 3-4 minutes until the vegetables are slightly tender.
  4. Add the lentils, diced tomatoes, vegetable broth, bay leaves, thyme, salt, and pepper to the pot.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for 45-50 minutes, or until the lentils are soft and tender.
  6. Remove the bay leaves and discard them.
  7. Serve the soup hot, garnished with fresh parsley or cilantro if desired.
