  1. Preheat the oven to 375°F.
  2. Cut the avocados in half and remove the pits.
  3. Scoop out some of the flesh from the center of each avocado half to make room for the egg.
  4. Crack an egg into each avocado half.
  5. Season the eggs with salt and pepper to taste.
  6. Place the avocado halves on a baking sheet lined with parchment paper.
  7. Bake the avocados in the oven for 15-20 minutes, or until the egg whites are set and the yolks are still runny.
  8. Remove the avocados from the oven and let them cool for a few minutes before serving.
  9. Sprinkle shredded cheese on top of the avocados (optional).
  10. Garnish the avocados with chopped fresh herbs, such as parsley or cilantro (optional).
  11. Serve the baked avocado eggs immediately.
